Puff pastry
Ingredients
W320 puff pastry flour 1.000 g
water 500 g
salt 20 g
Dafne croissant & sfoglia 1.000g
Brioche
Ingredients
W380 croissant flour 2.000 g
soy milk 200 g
cane sugar 400 g
Dafne crema-cake 300g
baker’s yeast 60g
salt 40g
improver20g
Method
Puff pastry
Briefly mix flour, water and salt.
Add Dafne croissant & sfoglia and make 2 4-way folds.
Leave to rest for about ten minutes and carry out a 4-way fold.

Brioche
Mix together all the ingredients except Dafne crema-cake, gradually adding the milk.
Once the dough is smooth and uniform, add Dafne crema-cake and finish mixing the dough.
Let the dough rest for about 20 minutes on the counter, covered with a plastic sheet.
Add the puff pastry to the brioche dough and carry out the fourth 4-way fold.
Roll out the dough and shape as desired, rise at 30°C and 75% RH for about 90 minutes.
Bake at 180°C for about 18 minutes in a static oven, or 160°C for 18 minutes in a fan oven.
